Make ready For Aloo Baingan sabzi :-
Make ready 5 Potatoes boiled
Take 5 Baingan/Brinjal washed and cut into small pieces
Take 1 Onion finely chopped
Get 1 inch piece ginger crushed & finely chopped
Prepare 5 Cloves garlic crushed & finely chopped
Prepare 2 Green chillies, finely chopped
Take 1/2 tsp Turmeric powder
Get 1/4 tsp red chilli powder
Take to taste Salt
Get Few curry leaves
Make ready 1/2 tsp Mustard seeds
Make ready 1/4 tsp Asafoetida
Get Few Lemon drops
Make ready 1-2 tbspn Oil
Prepare 1 tbspn coriander leaves finely chopped
Get For vada batter :-
Make ready 1 & half cup Besan/Gram flour
Get 2 tbspn Rice flour
Take 1/2 tsp Red chilli powder
Prepare 1/2 tsp Turmeric powder
Take to taste Salt
Prepare 1/4 tsp Hing /asafoetida
Make ready 1/4 tsp Baking soda
Get as required Water for making batter
Prepare as required Oil for deep frying
Steps to make Aloo Baingan Vada Pav !:
Take a kadhai, put oil and heat it, when hot add mustard seeds, then asafoetida powder, then add curry leaves, chopped ginger, garlic and green chilli. Saute well for a few minutes.
Then add in the chopped onion and saute again for 2 minutes.
Now put the turmeric powder and red chilli powder, then add the chopped brinjal pieces, mix well and let it cook for a few minutes.
Once it gets cooked add in the boiled and mashed potatoes, add salt and give a nice stir. Later put lemon juice and finely chopped coriander leaves and garnish it. Turn off the gas.
Now we shall make the vada batter. For that take a bowl and put all the dry ingredients,and mix well. Then add little water (as per need) and make a smooth thick batter.
Once the sabzi cools down make small balls. Keep the kadhai ready for deep frying, pour oil and let it get heated.
Now dip the balls in the besan batter and deep fry them till nicely brown and crisp. Serve hot.
For the assembling, you take the pav buns and cut into half. Do not cut it fully. Then apply green chutney and little peanut chutney. Keep the vada in the center and press the pav gently. Serve immediately with fried green chillies.
