Instructions to make Bhetki (Barramundi) fish curry:

1. Marinate the fish with half of the turmeric powder and salt.
2. Heat some mustard oil and deep fry the fishes. Keep them aside.
3. In the same wok, add more oil if required. Add the potatoes and cauliflower. Add the rest of the turmeric and some salt. Fry them well. Keep them aside.
4. Add the cumin seeds, bayleaf, cloves, cardamom and cinnamon. Let them splutter.
5. Add the tomato puree and cook it for a while.
6. Add some turmeric powder, ginger paste, cumin powder, red chilli powder and fry them very well till the oil separates.
7. Add the fried potatoes and cauliflower. Fry them very well.
8. Add some water for the gravy, some salt and the sugar to balance the salt.
9. Bring it to boil. After you get the desired consistency of the gravy, add the fishes.
10. Add the garam masala powder and ghee and the coriander leaves.
11. Mix them well and remove it from the flame.
12. Serve hot.
