10. Heat the cooking oil to medium in a small frying pan or wok.
11. Add the chilli flakes & broken chilies. Stir.
12. Take off the heat as soon as the chilies begin to sizzle.
13. Do not let the chilies burn, please. - Let the oil cool down completely. - Store in a clean & dry jar. - Use as required.
14. This is quite a versatile condiment. Can be used in Soups, Stir fried meat/veggies, Pasta, etc.
15. Note: - - 1. Use short or medium grain Rice. That’s the best for making Congee. - - 2. Use any oil except Sesame oil, Mustard Oil & Olive Oil. (I used Canola Oil).
