For the oats flour, just grind quick cooking oats or oatmeal in a mixer-grinder and rest of the recipe is the way I make besan chilla. These savoury pancakes are made thick and tastes almost like omelettes.

Instructions to make Oats and Buckwheat Cheela (Savoury Pancakes):
  1. Mix Oats, Buckwheat flour, onions and chillies with some water. Stir and make a Dosa batter consistency. Keep aside for 10 mins
  2. Keep a pan on high flame till it’s hot. Brush some oil. Spread a ladle of the batter on the hot tawa/pan.
  3. Place thin zucchini/veggies slices on top and lower the flame. Flip and cook both sides till crisp and golden.
  4. For dip - grind mint leaves, coriander leaves, green chillies and jeera powder, amchur powder and salt in a grinder jar. Add some water to adjust the consistency.
  5. Serve golden crisp cheela with this dip/chutney and crunchy cucumbers and lettuce.

It is a perfect option for vegans who want to make No-egg Oats Chilla or Oats Cheela can be served without any side since it is quite flavourful on its own.
