  1. Take 1 cup rice
  2. Take 1 cup grated coconut
  3. Prepare 1 cup milk
  4. Prepare 8 tsp ghee
  5. Get 1/2 tsp baking powder
  6. Prepare 2 tsp sugar
  7. Take to taste Salt

Steps to make Chitau Pitha with Coconut(Appam):
  1. Soak the rice for about 4 hours.
  2. Grind together the soaked rice, milk & grated coconut with a little water to make a smooth paste. Add baking powder & let it ferment in a warm place.,(the consistency of the batter should be watery).
  3. Add salt & sugar- note we do not add salt in the previous stage because it would demote the fermentation process.
  4. Check for the consistency,if the batter is too thick then add water little by little.
  5. Preheat the kadai/frypan with 1/2tsp ghee.
  6. After the kadai is heated scoop a ladle full of the mixture & pour in the centre.
  7. Cover the kadai/frying pan with a lid. Cover the side of the lid with a wet cloth.
  8. Cook it in a low medium flame.
  9. After few minutes remove it from flame, no need to flip the upper portion of the pitha/appam.
  10. Serve with kheer.
  11. Enjoy the odiya delicacy.

It is perfect for making Appam to go with Kerala stew. It came nicely packaged with a wooden spatula and a teflon scrunchy for cleaning it without scratching the nonstick coating. Appam - the Queen of Kerala is a fermented flat bread made out of Rice and Coconut. In Tamil, it is known as "Aappam". The Srilankans prefer to call it as "appa" or "hopper".
