  4. Now heat the appe pan on high heat, reduce the flame once the pan is hot, add 1 to 2 drops of cooking oil in each mould of the pan, Pour few mustard seeds and few curry leaves in each mould of the pan and let's it crackle
  5. Now pour 1tsp dosa batter in each mould and place one each prepared potato ball
  6. Top it with some more dosa batter and sprinkle little oil on top
  7. Cover and cook on medium flame for a minute, open the cover and check if it is half cooked, at this point reduce flame to low, take the wooden appe turner and turn all the appes upside-down
  8. On low to medium flame, covering the pan, cook the appes for 5 to 7 minutes until medium brown on the other side too
  9. Now they are ready, serve with green chutney or tomato sauce
