Get 150 gms Methi chopped
Prepare 1 cup Mixed Flour (Bajra flour, besan and wheat flour)

Take 1 cup Grated Fresh Coconut
Make ready 1/2 cup Green Garlic chopped
Make ready 1-2 Green Chillies
Get 1 Small piece of Ginger
Take 1/4 cup Green Coriander Leaves chopped
Take 1-2 tsp Lemon Juice
Prepare as required Water
Take 1 cup Methi chopped
Get 1/2 tsp Turmeric Powder
Prepare 1 tsp Red Chilli Powder
Get 1 tsp Dhania Jeera Powder
Prepare 1 tsp Garam Masala
Take to taste Salt
Make ready 1/2 tsp Sugar
Prepare Other Ingredients :
Prepare 100 gms Surti Papdi (Vaal)
Make ready 4-5 Brinjals
Get 4-5 Baby Potatoes
Get 1-2 Sweet Potatoes
Get 1 small piece Purple Yam(Ratalu)
Take 2-3 Raw Bananas
Take 10-12 Ivy Gourd (Tindora)
Get 2 tsp Oil
Make ready 1 tbsp Ajwain/carom seeds
Prepare 2-3 tbsp Sesame Seeds (Til)
Get Pinch Hing
Make ready 2 tsp Water
Take to taste Salt
Take 1 tsp Sugar
Take 1/2 tsp Red Chilli Powder
Make ready 1/2 tsp Garam Masala
Make ready 1/2 tsp Turmeric Powder
The name "Undhiyu" is derived from the Gujarati word "undhu" which means upside down. Undhiyu, a traditional Gujarati curry prepared with many fresh vegetables and dhokli muthiya, is a must have item on festivals like Uttarayan (kite flying festival), Diwali, etc. Undhiyu is a one pot vegetable casserole dish that is the hallmark of Gujarati vegetarian cuisine. Generally preparing undhiyu takes a lot of time and needs patience.
Steps to make Gujarati Undhiyo!:
Muthiya - Mix all ingredients listed for muthiya in a mixing bowl except oil for frying. Gently make muthiya's and deep fry them and keep aside.
Masala : - In a mixer grinder jar, take freshly grated coconut, green lasun, green chillies, a small piece of ginger, coriander, lemon juice. Make a paste adding little water if required. In a mixing bowl take finely chopped methi. Add this paste to it. Add haldi, red chilli powder, dhania jeera powder, garam masala, salt, sugar. Mix all well. Masala for undhiyo is ready.
Cut and keep aside all the vegetables. Cut bananas in big pieces. Stuff brinjals and bananas with masala. Add all the vegetables except muthiyas to masala. Mix all well.
In a big pressure cooker, heat oil. Add ajwain and pinch of hing. Saute for few seconds. Add vegetables mixed with masala. Mix well. Take very water. Add salt, sugar, haldi, red chilli powder, garam masala to water and mix well. Add this water to vegetables and give it a good mix. Pressure cook for 2 whistles.
Then in a broad pan heat oil. Add ajwain and sesame seeds. Once it crackles, add cooked Undhiyo in pressure cooker and mix all well. Add prepared muthiyas and again mix well and cook for 1-2 minutes.
Garnish with green garlic and serve hot with roti.
