The chickpeas are cooked with Indian spices, onion-tomato paste and some coconut milk (substitute given in the recipe. Punjabi Chole, or Amritsari Chole, is a creamy, tangy and dark-colored chickpea curry made with a special masala blend served street-style.

Sauté it until it turns golden brown. Add in the ginger-garlic paste and curry leaves. Put the chopped tomatoes to the mix and keep sautéing.
3. Now to the mixture, add in all the spices and sauté for 2-3 mins. Add the cooked chickpeas to the mixture along with the water. Add in some more water is required. Close the lid and let it cook for 10-12 mins on low flame. Garnish it with coriander leaves and serve it hot with Indian bread/ Rice.
