Prepare For Garnishing Coriander leaves
Get For Amritsari Alu Kulchaa
Prepare 2 cups Refined flour (maida)
Get 1/2 tsp Baking powder
Take 1 tsp Baking soda
Prepare 1 cup Yogurt
Get to taste Salt
Make ready Little sugar
Prepare For brushing Melted butter
Make ready 1 tbsp Kalonji
Take 1 tbsp Chopped Coriander
Get For Stuffing
Get 3-4 Boiled potato medium size
Prepare 1 tsp Finely chopped ginger
Prepare 1 tsp Finely chopped Coriander
Take As needed Finely chopped green chilli
Prepare to taste Salt
Prepare 1 tsp Cumin powder
Get 1 tsp Red chilli powder
Prepare 1 tsp Aamchur powder
Today we are going to make Special Amritsari Kulche Chole. Chole Kulcha is one among the most popular street food items in Delhi. Instructions to make Amritsari Chole Kulche:
Chole Recipe- Over night soak the chana. Boiled the chana completely.
Heat oil in a deep pan add cumin seeds,red chilli whole,bay leaves and some whole spices saute till fragrent.
Then add onion and saute. Then add ginger garlic paste and green chilli and saute. Add salt and again saute.
Add all the masala and tomato and saute. Then add boiled chana and mix it.
Cover and cook 10-15 min then add water and stir well.
Again cover and cook and garnished with Coriander leaves and serve hot with naan or kulcha.
Kulche Recipe-Place a refiend flour in a bowl, make a well in the center, add baking soda,baking powder,yogurt pinch of salt and little bit of oil and mix.
Add lukewarm water and knead into a dough.
Cover and rest for 3-4 hours to rise.
In a large mixing bowl add boil potato and mashed it. Add salt,ginger,corinder,green chilli,red chilli powder,cumin powder and aamchur powder and mix it very well and set aside.
Divide the dough into 4 equal portions. Press a portion of the dough flat on a rolling board and roll out into an oblong of 125 mm.
Then stuff the potato mixture into the dough and press gently and again rolling very carefully.
Using little plain flour for rolling. Add kalonji and chopped Coriander on the middle of the kulcha and press it with finger tips.
Heat a non-stick tava and place the kulcha, cook it on one side till it's puffs slightly and then turn over.
Cook it on the other side it's roast on an open flame till it turns golden brown.
Brush each kulcha with the melted butter and serve immedietely.
